Biltong and Jerky : The Science Behind The Snacks

Nutrition is critical to good health and wellbeing – and as we become increasingly aware of what we’re putting in our bodies and why, we thought it’s worth looking at some smart snacking ideas.

Most of the traditional snacks – while tempting and convenient – are firmly in the ‘unhealthy’ category.  Things like potato crisps, pretzels, biscuits, crackers, muesli bars and flavoured popcorn are generally ultra processed, have limited nutritional value and can be very high in carbohydrates, refined sugars, saturated fats and salt – so we get why people want alternative snack options that support a healthier lifestyle.

Enter biltong and jerky.  Biltong and jerky are not only universally popular for the way they taste (and like traditional snacks, they’re tempting and convenient too!), they also get the tick of approval from dieticians because of their nutritional profile.  But don’t take our word for it, let’s look at some facts and figures to illustrate the science behind these dried meat snacks.

Jerky and biltong: the science behind the snack

Both biltong and jerky have lean meat as their primary ingredient, but the two are actually quite different in terms of the production processes and the ingredients used.

Biltong is made from chunks of meat which are first cured in a salt and vinegar brine, then seasoned and spiced before being hung to air dry naturally.  This natural dehydration process can take several weeks to complete, and it enables the important nutrients to be retained.

On the other hand, jerky is made from strips of lean meat which are first marinated in a blend of ingredients before being flash dried over heat.  While still considered a protein-forward ‘heathier’ snack which provides a good mix of important nutrients, the ingredients and the cooking process oj jerky give it a slightly different nutritional profile to biltong.

While it’s not possible to give an exact nutritional breakdown of the two because the ingredients and production process varies from brand to brand, we are able to give you a general idea of what you’re putting into your body when you tuck into these delectable snacks.   Remember, you should always buy your biltong or jerky from a reputable producer so that you’re assured of a high-quality product.

Snacking by numbers:  why the ingredients of biltong and jerky matter

Let’s unpack the nutritional profile jerky and biltong to show why these two snacks are protein powerhouses that support a healthy lifestyle and which tick a lot of boxes in terms of RDA (recommended daily allowances).   We’ll also show which nutrients support vital bodily functions.

The following numbers are approximate, but they do give you a good idea of why biltong and jerky are smart snack choices.

A 30g serving size of lean beef biltong contains around:

  • 300kJ energy (around 75 calories)
  • 16g protein
  • 2g fat (you can opt for lean or fatty biltong depending on your preferences)
  • 1g carbohydrates
  • Iron (35% of RDA), zinc, sodium (20% of RDA), choline, B-vitamins including B12 and B9 (folate) plus minerals such as magnesium, potassium, and phosphorus.

Biltong is an excellent source of lean protein, making it the ideal snack for muscle repair and growth – plus it’s digested slowly, providing a steady, sustained release of energy.

Nutritional profile of jerky

There is a significant overlap in the nutritional offerings of jerky and biltong, but the simple spice and vinegar mix and natural air drying process of biltong make it a healthier choice.  Jerky tends to have a higher sodium and sugar content as a result of the various ingredients and condiments used in the marinades (eg Worcester sauce, brown sugar).  Jerky is also dehydrated over heat which can result in a breakdown of some of the amino acids.

What’s so good about biltong and jerky?

First and foremost, biltong and jerky are low in carbs and fat and rich in protein, so they’re ideal snacks for maintaining a balanced diet.  Like any food, they should be enjoyed in moderation (although we know how tough it is to resist temptation when it comes to these meaty treats!), but you can certainly munch with confidence because they’re doing your body good.

Snack science is about more than just nutrients

Biltong and jerky have their origins in the very early civilizations of Southern Africa and the Americas who created these dried snacks as a survival mechanism.  They needed foods that were extremely nutritious, long-lasting and convenient which would sustain them through brutal winters and extended journeys – and they worked out that dehydrated meat was the answer.  In those days, it was all about survival rather than science, but centuries later, while not much has changed in terms of the concept and the ingredients, the science speaks volumes.  Biltong and jerky offer excellent nutritional value and can be eaten anywhere, anytime.
